Italian Pasta Recipes - Pasta Bows with Red Pepper Sauce (Farfalle con Salsa di Peperoni Rosso) Recipe

Ingredients                     

  • 15 ml/1 tbsp oil

  • 1 onion, cut into chunks

  • 1 carrot, chopped

  • 2 red (bell) peppers, chopped

  • 1 celery stick, chopped

  • 400 g/14 oz/1large can of chopped tomatoes

  • 5 ml/1 tsp chopped fresh marjoram

  • Salt and freshly ground black pepper

  • 350 g/12 oz pasta bows


Method:

  1. Heat the oil and cook the onion, carrot, peppers and celery for 5 minutes until soft.

  2. Add the tomatoes, marjoram and seasoning and cook slowly for 15 minutes.

  3. Bring a large pan of salted water to the boil and cook the pasta for 8-10 minutes.

  4. Drain and return to the saucepan. Pour over the sauce, toss and serve immediately.
