Pasta Bows with
Roasted Vegetables (Farfalle con Verdure Arrostite) Recipe
Ingredients

1 red onion, cut into
chunks
-
2 beefsteak tomatoes, cut
into chunks
-
3 courgettes, cut into 1
cm/1/2 in slices
-
2 garlic cloves, crushed
-
90ml/6 tbsp olive oil
-
salt and freshly ground
black pepper
-
50g/1/2 cup pine nuts
-
350g/12 oz pasta bows
-
few sprigs of basil, torn
into small pieces
-
225g/2 cups Mozzarella
cheese, grated
-
50g/1/2 cup Pecorino
cheese, grated
Method:
-
Place the onion, tomatoes, courgettes and garlic in
a large roasting tin (pan). Drizzle over the olive
oil and season with the salt and pepper.

Roast in a
preheated oven at 220°C/425°F/gas mark 7 for 30
minutes. Stir halfway through cooking.

Add the pine
nuts for the last 10 minutes of cooking
time.
Cook
the pasta bows in a large pan of boiling salted
water.

Drain and toss with the vegetables. Stir in the
basil, Mozzarella and Pecorino cheeses and serve
immediately.
