Italian Pasta Recipes - Pasta with Butter and Truffle (Tagliarini con Burro e Tartufo) Recipe

Ingredients                 

  • 350 g/12 oz tagliarini

  • 50 g/2 oz/1/4 cup unsalted (sweet) butter

  • Salt and freshly ground black pepper

  • 15 ml/1 tbsp chopped fresh parsley

  • 1 white truffle, shaved into fine slivers


Method:

  1. Add the pasta to a large saucepan of boiling water and cook until just tender. Drain and return to the saucepan.

  2. Heat the butter, season and add the parsley. Spoon the pasta into a warmed serving dish and pour over the butter.

  3. Sprinkle with the truffle and serve immediately.
