Italian Pasta Recipes - Pasta with Grilled Peppers (Pasta con Peperoni Arrostiti) Recipe

Ingredients

  • 4 red, yellow and green (bell) pepper, halved

  • 3 garlic cloves, crushed

  • 15ml/1 tbsp balsamic vinegar

  • 5ml/1 tsp paprika

  • 350g/12 oz tagliatelle

  • 60ml/4 tbsp olive oil


Method:

  1. Place the peppers and garlic on a grill pan and cook on high for 5-10 minutes until the peppers are blistered all over.

  2. Allow to cool for 1 minute. Peel the peppers and remove the core and seeds.

  3. Slice the peppers and mix with the garlic, vinegar and paprika.

  4. Place the pasta in a large pan of boiling, salted water and cook for 8-10 minutes. Drain and add the olive oil.

  5. Spoon over the pepper mixture and serve immediately.
