Pasta with Grilled
Peppers (Pasta con Peperoni Arrostiti) Recipe
Ingredients
-
4 red, yellow
and green (bell) pepper, halved
-
3 garlic
cloves, crushed
-
15ml/1 tbsp
balsamic vinegar
-
5ml/1 tsp
paprika
-
350g/12 oz
tagliatelle
-
60ml/4 tbsp
olive oil
Method:

Place the peppers and
garlic on a grill pan and cook on high for 5-10
minutes until the peppers are blistered all
over.

Allow to cool for 1 minute.
Peel the peppers and remove the core and seeds.

Slice the peppers and mix
with the garlic, vinegar and paprika.

Place the pasta in a large
pan of boiling, salted water and cook for 8-10
minutes. Drain and add the olive oil.

Spoon over the pepper
mixture and serve immediately.
