Italian Pasta Recipes - Pasta with Mussels (Pasta con Cozze) Recipe

Ingredients

  • 15ml/1 tbsp olive oil

  • 1 onion, chopped

  • 5ml/1 tsp chopped fresh parsley

  • 2.5ml/1/2 tsp salt

  • 2.5ml/1/2 tsp freshly ground black pepper

  • 120ml/1/2 cup white wine

  • 175ml/3/4 cup water

  • 900g/2 lb mussels in shells, scrubbed and beards removed

  • 350g/12 oz spaghetti

  • 25g/2 tbsp unsalted (sweet) butter

  • 30ml/2 tbsp chopped fresh parsley


Method:

  1. Heat the oil and fry the onion for 3 minutes. Stir in the parsley, salt, pepper and wine. Pour in the water and bring to the boil.

  2. Add the mussels and cover with the lid. Cook for 4 minutes. Discard any mussels that have not opened.

  3. Add the pasta to a large saucepan of boiling water and cook for 10 minutes until tender but firm.

  4. Drain and return to the pan. Add the butter and toss well. Place in a warmed serving dish, spoon over the mussels.

  5. Sprinkle with the parsley and serve immediately.
