Pasta with Prawns
and Cream (Pasta con Gamberetti e Crema) Recipe
Ingredients

350g/12 oz
tagliatelle
-
25g/2 tbsp
unsalted (sweet) butter
-
15ml/1 tbsp
olive oil
-
1 onion,
chopped
-
5ml/1 tsp
chopped fresh basil
-
2.5ml/1/2 tsp
salt
-
2.5ml/1/2
freshly ground black pepper
-
120ml/1/2 cup
white wine
-
175ml/3/4 cup
double (heavy) cream
-
450g/1 lb
cooked, peeled prawns
-
30ml/2 tbsp
chopped fresh parsley
Method:
-
Add the pasta
to a large saucepan of boiling water and cook
for 8-10 minutes.

Drain and
return to the saucepan with the butter. Heat the
oil and fry the onion for 3 minute.

Stir in the
basil, salt, pepper and wine. Pour in the cream
and just bring to the boil.

Add the
prawns and cover with a lid. Cook for 4 minutes.
Place the pasta in a warmed serving dish and
pour over the sauce.

Sprinkle with
the parsley and serve immediately.
