Pasta Quills with
Aubergine (Penne con Melazzane) Recipe
Ingredients

45 ml/3 tbsp olive
oil
-
2 large onions,
finely chopped
-
2 garlic cloves,
crushed
-
2 large aubergines
(eggplants), chopped
-
150ml/2/3 cup
white wine
-
150ml/2/3 cup
double (heavy) cream
-
Salt and freshly
ground black pepper
-
350 g/12 oz pasta quills
-
15ml/1 tbsp
chopped fresh marjoram
Method:

Heat the oil in a saucepan and cook the onions and garlic until softened.
Add the aubergines and cook for 4 minutes.

Stir in
the wine, cream, salt and pepper. Bring to the boil,
reduce the heat and simmer for 5 minutes until the
mixture is pulpy.

Bring a large pan of salted water
to the boil and cook the pasta for 8-10 minutes.
Drain well.

Season to taste with the salt and
pepper and divide between the serving dishes.

Spoon
over the aubergine mixture. Garnish with the chopped
marjoram and serve at once.
