Italian Pasta Recipes - Pasta Quills with Aubergine (Penne con Melazzane) Recipe

Ingredients                 

  • 45 ml/3 tbsp olive oil

  • 2 large onions, finely chopped

  • 2 garlic cloves, crushed

  • 2 large aubergines (eggplants), chopped

  • 150ml/2/3 cup white wine

  • 150ml/2/3 cup double (heavy) cream

  • Salt and freshly ground black pepper

  • 350 g/12 oz pasta quills

  • 15ml/1 tbsp chopped fresh marjoram


Method:

  1. Heat the oil in a saucepan and cook the onions and garlic until softened. Add the aubergines and cook for 4 minutes.

  2. Stir in the wine, cream, salt and pepper. Bring to the boil, reduce the heat and simmer for 5 minutes until the mixture is pulpy.

  3. Bring a large pan of salted water to the boil and cook the pasta for 8-10 minutes. Drain well.

  4. Season to taste with the salt and pepper and divide between the serving dishes.

  5. Spoon over the aubergine mixture. Garnish with the chopped marjoram and serve at once.
