Italian Pasta Recipes - Pasta with Ricotta (Pasta con Ricotta) Recipe

Ingredients                     

  • 350 g/12 oz pasta spirals

  • Grated rind of 2 lemons

  • 175 g/6 oz/3/4 cup Ricotta cheese

  • 10 g/1/4 oz/2 tsp unsalted (sweet) butter

  • Salt and freshly ground black pepper

  • 50 g/2 oz/1/2 cup Parmesan cheese, grated


Method:

  1. Place the pasta in a large pan of boiling, salted water and cook for 5 minutes.

  2. Stir the lemon rind into the Ricotta cheese. Drain the pasta and stir in the butter, Ricotta cheese and seasoning.

  3. Place in an ovenproof dish and sprinkle over the Parmesan cheese.

  4. Bake in a preheated oven at 190°C/375°F/gas mark 5 for 10 minutes until brown.
