Italian Pasta Recipes - Pasta Shells with Vegetables (Conchiglie con Verdura) Recipe

Ingredients                      

  • 30 ml/1 tbsp olive oil

  • 1 aubergine (eggplant), chopped, salted and drained

  • 1 garlic clove, crushed

  • 2 large courgettes (zucchini), sliced

  • 1 green (bell) pepper, sliced

  • 1 red (bell) pepper, sliced

  • 1 yellow (bell) pepper, sliced

  • 400 g/14 oz/1large can chopped tomatoes

  • 30 ml/2 tbsp tomato puree (paste)

  • Salt and freshly ground black pepper

  • 350 g/12 oz pasta shells

  • 30 ml/2 tbsp chopped fresh oregano

  • 50 g/2 oz/1/2 cup Parmesan cheese, grated


Method:

  1. Heat the oil in a pan and cook the aubergine, garlic and courgettes for 4 minutes.

  2. Stir in the sliced peppers, tomatoes and tomato puree and cook for 10 minutes. Season with the salt and pepper.

  3. Cook the pasta shells in boiling salted water for 10 minutes until firm but tender. Drain the pasta and transfer to a large bowl.

  4. Pour over the sauce and sprinkle over the oregano and Parmesan cheese.
