Italian Pasta Recipes - Pasta with Spinach and Sage (Pappardelle con Spinaci e Salvia) Recipe

Ingredients                     

  • 15g/1 tbsp unsalted (sweet) butter

  • 1 onion, chopped

  • 350g/12 oz spinach, roughly chopped

  • 350g/12 oz pappardelle (wide pasta noodles)

  • 45ml/3 tbsp chopped fresh sage

  • salt and freshly ground black pepper

  • 50g/1/2 cup Pecorino cheese, grated


Method:

  1. Heat the butter in a saucepan and cook the onion for 5 minutes until soft.

  2. Add the spinach, cover and cook gently for 5 minutes. Cook the pappardelle in salted water for 10 minutes. Drain and return to the saucepan.

  3. Pour over the butter, the onion, the spinach and the sage. Toss and season well.

  4. Spoon into a heated serving dish. Sprinkle over the Pecorino cheese and serve.
