Italian Pasta Recipes - Pasta Spirals with Mushrooms (Fusilli con Funghi) Recipe

Ingredients                     

  • 30 ml/2 tbsp olive oil

  • 1 onion, chopped

  • 1 garlic clove, crushed

  • 450 g/1lb mushrooms, chopped

  • 100 g/4 oz Parma ham, chopped

  • 60 ml/4 tbsp dry white wine

  • Salt and freshly ground black pepper

  • 350 g/12 oz pasta spirals

  • 50 g/2 oz/1/2 cup Pecorino cheese, grated

  • 30 ml/2 tbsp chopped fresh sage


Method:

  1. Heat the oil and fry (sauté) the onion and garlic for 1 minute. Stir in the mushrooms and cook until they are beginning to brown.

  2. Add the ham, wine, salt and pepper and continue cooking for 5 minutes.

  3. Place the pasta in a pan of boiling, salted water and cook for 8-10 minutes, until tender, but still firm. Drain well.

  4. Mix the pasta with the mushroom sauce, sprinkle with the cheese and sage and serve.
