Pasta Spirals with
Mushrooms (Fusilli con Funghi) Recipe
Ingredients

30 ml/2 tbsp olive
oil
-
1 onion, chopped
-
1 garlic clove,
crushed
-
450 g/1lb
mushrooms, chopped
-
100 g/4 oz Parma ham, chopped
-
60 ml/4 tbsp dry
white wine
-
Salt and freshly
ground black pepper
-
350 g/12 oz pasta spirals
-
50 g/2 oz/1/2 cup
Pecorino cheese, grated
-
30 ml/2 tbsp
chopped fresh sage
Method:
-
Heat the oil and fry (sauté) the onion and garlic for
1 minute. Stir in
the mushrooms and cook until they are beginning to
brown.
-
Add the ham, wine, salt and pepper and
continue cooking for 5 minutes.

Place the pasta in a
pan of boiling, salted water and cook for 8-10
minutes, until tender, but still firm. Drain well.

Mix the pasta with the mushroom sauce, sprinkle with
the cheese and sage and serve.
