Italian Pasta Recipes - Penne with Spicy Chicken (Penne con Pollo Piccante) Recipe

Ingredients                     

  • 450 g/1lb penne

  • 450 g/1lb skinless chicken breast fillets

  • 30 ml/2 tbsp olive oil

  • 1 red (bell) pepper, cut in thin strips

  • 150 ml/2/3 cup white wine

  • 15 ml/1 tbsp tomato puree (paste)

  • 150 ml/2/3 cup single (light) cream

  • 1 red chili, seeded and finely chopped


Method:

  1. Cook the pasta in lightly salted water for 10 minutes until firm but tender.

  2. Cut the chicken into 2 cm/1/4 in cubes and fry (sauté) in the oil for 4 minutes on each side.

  3. Put the red pepper, white wine and tomato puree into a saucepan and boil, stirring occasionally, until the liquid has reduced by half.

  4. Stir in the cream and seasoning and heat gently for 1 minute.

  5. Drain the pasta and stir into the sauce with the chicken and chopped chili. Heat through and serve.
