Penne with Spicy
Chicken (Penne con Pollo Piccante) Recipe
Ingredients

450 g/1lb penne
-
450 g/1lb skinless chicken breast fillets
-
30 ml/2 tbsp olive
oil
-
1 red (bell)
pepper, cut in thin strips
-
150 ml/2/3 cup
white wine
-
15 ml/1 tbsp tomato
puree (paste)
-
150 ml/2/3 cup single (light)
cream
-
1 red chili, seeded and finely chopped
Method:
-
Cook the pasta in lightly salted water for 10 minutes until firm but
tender.

Cut the chicken into 2 cm/1/4 in cubes
and fry (sauté) in the oil for 4 minutes on each
side.

Put the red pepper, white wine and tomato
puree into a saucepan and boil, stirring
occasionally, until the liquid has reduced by half.

Stir in the cream and seasoning and heat gently for
1 minute.

Drain the pasta and stir into the sauce
with the chicken and chopped chili. Heat through
and serve.
