Italian Pasta Recipes - Penne with Tuna and Black Olives (Penne con il Tonno e Olive Nere) Recipe

Ingredients                     

  • 60 ml/4 tbsp olive oil

  • 1 onion, chopped

  • 2 garlic cloves, crushed

  • 400 g/14 oz/1 large can chopped tomatoes

  • 100 g/1 cup black olives, stoned (pitted)

  • 15 ml/1 tbsp chopped fresh parsley

  • 185 g/1 small can tuna, drained and flaked

  • Salt and freshly ground black pepper

  • 350 g/12 oz penne


Method:

  1. Heat the oil in a large pan and fry (sauté) the onion and garlic until soft but not brown.

  2. Add the tomatoes and olives and simmer for 10 minutes. Add the parsley and tuna and season to taste with salt and pepper. Simmer for about 5 minutes.

  3. Meanwhile, bring a large pan of salted water to the boil, add the pasta and boil for about 10 minutes until just tender.

  4. Drain, then transfer to a warmed serving bowl. Pour the sauce over the pasta, toss lightly together, then serve at once.
