Italian Pasta Recipes - Potatoes and Noodles with Garlic Sauce (Patate e Tagliatelle con Salsa all' Aglio) Recipe

Ingredients                 

  • 450 g/1lb small new potatoes

  • Salt and freshly ground black pepper

  • 350 g/12 oz tagliatelle

  • 250 ml/8 fl oz/1 cup Creamy Garlic Sauce

  • A few sprigs of basil, torn into small pieces

  • 50 g/2 oz/1/2 cup Pecorino cheese, grated


Method:

  1. Boil the potatoes in their skins for 10-15 minutes until tender. Drain, cool and cut thickly into rounds.

  2. Bring 600 ml/2 1/2 cups salted water to the boil. Cook the tagliatelle rapidly for 8 minutes. Drain and mix with the sliced potatoes.

  3. Heat the Creamy Garlic Sauce and pour over the potatoes and noodles.

  4. Sprinkle with the basil and grated cheese and serve immediately.
