Italian Pasta Recipes - Seafood and Mascarpone Fettucine (Fettucine con Frutti di Mare e Mascarpone) Recipe

Ingredients                 

  • 150 ml/2/3 cup passata (sieved tomatoes)

  • 100 g/4 oz/1/2 cup Mascarpone cheese

  • 350 g/12 oz frozen seafood cocktail, thawed

  • 450 g/1lb fettucine

  • Salt and freshly ground black pepper


Method:

  1. Heat the passata with the Mascarpone over a low heat until they are very hot and well blended.

  2. Stir in the seafood and simmer for 5 minutes. Bring a large pan of salted water to the boil and add the fettucine.

  3. Cook for 10 minutes until tender. Drain thoroughly and pour into a serving dish.

  4. Pour over the hot seafood and season well.
