Italian Recipes - Seafood and Mascarpone Fettucine (Fettucine con Frutti di Mare e Mascarpone) Recipe
Ingredients
150 ml/2/3 cup passata (sieved tomatoes)
100 g/4 oz/1/2 cup Mascarpone cheese
350 g/12 oz frozen seafood cocktail, thawed
450 g/1lb fettucine
Salt and freshly ground black pepper
Method:
Heat the passata with the Mascarpone over a low heat until they are very hot and well blended.
Stir in the seafood and simmer for 5 minutes. Bring a large pan of salted water to the boil and add the fettucine.
Cook for 10 minutes until tender. Drain thoroughly and pour into a serving dish.
Pour over the hot seafood and season well.
