Italian Pasta Recipes - Seafood Noodles (Tagliatelle con Frutte di Mare) Recipe

Ingredients                     

  • 30 ml/2 tbsp olive oil

  • 2 garlic cloves, crushed

  • 15 ml/1 tbsp chopped fresh parsley

  • 4 canned anchovy fillets, finely chopped

  • Salt and freshly ground black pepper

  • 175 g/6 oz squid, cut into small pieces

  • 75 ml/5 tbsp dry white wine

  • 100 g/4 oz mushrooms, quartered

  • 225 g/8 oz shelled mussels

  • 225 g/8 oz shelled cockles

  • 350 g/12 oz tagliatelle


Method:

  1. Heat half the oil in a large frying pan (skillet) and cook the garlic, parsley and anchovies for 1 minute. Season with the salt and pepper.

  2. Add the remaining oil to another pan and cook the squid for 2 minutes. Add the squid to the garlic and anchovies in the frying pan. Pour in the wine and simmer for 8 minutes.

  3. Stir in the mushrooms and cook for 2 minutes. Add the mussels and cockles and simmer for 5 minutes.

  4. Bring a large pan of salted water to the boil and add the tagliatelle. Cook for 10 minutes until firm but tender.

  5. Drain well and place in a warm dish. Spoon over the seafood and add a good grinding of black pepper.
