Seafood Noodles (Tagliatelle
con Frutte di Mare) Recipe
Ingredients
-
30 ml/2 tbsp olive
oil
-
2 garlic cloves,
crushed
-
15 ml/1 tbsp chopped
fresh parsley
-
4 canned anchovy
fillets, finely chopped
-
Salt and freshly
ground black pepper
-
175 g/6 oz squid, cut into small
pieces
-
75 ml/5 tbsp dry white wine
-
100 g/4 oz
mushrooms, quartered
-
225 g/8 oz shelled mussels
-
225 g/8 oz shelled
cockles
-
350 g/12 oz tagliatelle
Method:
-
Heat half the oil in a
large frying pan (skillet) and cook the garlic,
parsley and anchovies for 1 minute. Season with the
salt and pepper.

Add the remaining oil to another
pan and cook the squid for 2 minutes. Add the squid
to the garlic and anchovies in the frying pan. Pour
in the wine and simmer for 8 minutes.

Stir in the
mushrooms and cook for 2 minutes. Add the mussels
and cockles and simmer for 5 minutes.

Bring a large
pan of salted water to the boil and add the tagliatelle. Cook for 10 minutes until firm but
tender.

Drain well and place in a warm dish. Spoon
over the seafood and add a good grinding of black
pepper.
