Seafood Spaghetti
(Spaghetti con Frutti di Mare) Recipe
Ingredients
-
225 g/8 oz cooked
peeled prawns (shrimp)
-
225 g/8 oz shelled
scallops
-
150 ml/2/3 cup
dry white wine
-
15 ml/1 tbsp olive oil
-
1 onion, chopped
-
3 tomatoes, skinned
and finely chopped
-
350 g/12 oz
spaghetti
-
Salt and freshly
ground black pepper
Method:
-
Poach the scallops in the white wine for 5 minutes. Lift out of the wine
and cut in quarters.

Heat the oil in a frying pan
(skillet) and cook the onion for 2 minutes until
soft.
-
Add the tomatoes and wine from the scallops and
cook
rapidly for 5
minutes, reduce
the heat and simmer for 20 minutes.

Bring a large
pan of salted water to the boil and add the
spaghetti. Cook for 10 minutes until firm but
tender.

Drain well and place in a warmed serving
dish. Stir the scallops and prawns into the tomato
sauce and season well with the salt and pepper.

Heat
for 5 minutes and spoon over the spaghetti.
