Italian Pasta Recipes - Sicilian Spaghetti (Spaghetti alla Siciliani) Recipe

Ingredients                 

  • 15 ml/1 tbsp oil

  • 1 onion, chopped

  • 2 garlic cloves, chopped

  • 1 red (bell) pepper, chopped

  • 2 celery sticks, chopped

  • 400 g/14 oz/1large can of chopped tomatoes

  • 5 ml/1 tsp chopped fresh tarragon

  • 350 g/12 oz spaghetti

  • Salt and freshly ground black pepper

  • 50 g/2 oz/1/2 cup Parmesan cheese, grated


Method:

  1. Heat the oil and cook the onion, garlic, pepper and celery for 5 minutes until soft.

  2. Add the tomatoes and tarragon, and cook slowly for 15 minutes.

  3. Bring a large pan of salted water to the boil and cook the spaghetti for 8 minutes. Drain and return to the saucepan.

  4. Pour over the sauce, season and serve immediately with the Parmesan cheese sprinkled over.
