Sicilian Spaghetti
(Spaghetti alla Siciliani) Recipe
Ingredients

15 ml/1 tbsp oil
-
1 onion, chopped
-
2 garlic cloves,
chopped
-
1 red (bell)
pepper, chopped
-
2 celery sticks,
chopped
-
400 g/14 oz/1large
can of chopped tomatoes
-
5 ml/1 tsp chopped
fresh tarragon
-
350 g/12 oz spaghetti
-
Salt and freshly
ground black pepper

50 g/2 oz/1/2 cup Parmesan cheese, grated
Method:
-
Heat the oil and cook the onion, garlic, pepper and celery for 5 minutes
until soft.

Add the tomatoes and tarragon, and cook
slowly for 15 minutes.

Bring a large pan of salted water to the
boil and cook the spaghetti for 8 minutes. Drain and
return to the saucepan.

Pour over the sauce, season
and serve immediately with the Parmesan cheese
sprinkled over.
