Italian Pasta Recipes - Smoked Salmon with Green Noodles (Salmone Affumicato con Tagliatelle Verde) Recipe

Ingredients                     

  • 100 g/4 oz spinach, washed

  • 450 g/4 cups plain (all-purpose) flour

  • 1.5 ml/1/4 tsp salt

  • 4 eggs

  • 300 ml/1 1/4 cups double (heavy) cream

  • 1.5 ml/1/4 tsp cayenne

  • 50 g/2 oz/1/4 cup unsalted (sweet) butter, heated

  • 225 g/8 oz smoked salmon, chopped


Method:

  1. Place the spinach in a saucepan and cook, covered, for 8-10 minutes. Chop finely or puree until smooth.

  2. Sift the flour and salt in a bowl and blend into the eggs and spinach.

  3. The green color can be altered by the quantity of spinach included in the recipe. Knead very thoroughly until smooth.

  4. Cover the bowl with a cloth and leave to stand for 30 minutes.

  5. Roll out the dough paper-thinly and cut into strips to produce green noodles. Hang the pasta to dry on a clean cloth over the back of a chair.

  6. Heat the cream in a basin over hot water and stir in the cayenne. Cook the noodles in plenty of boiling salted water for 3 minutes.

  7. Drain and return to the saucepan. Stir in the butter and mix in the salmon. Pour the cream over the pasta and serve immediately.
