Italian Pasta Recipes - Spaghetti Bolognese (Spaghetti alla Bolognese) Recipe

Ingredients                 

  • 2 large onions

  • 25 g/1 oz/2 tbsp unsalted (sweet) butter

  • 450 g/1lb/4 cups minced (ground) beef

  • Salt and freshly ground black pepper

  • 50 ml/3 1/2 tbsp red wine

  • 400 g/14 oz/1large can chopped tomatoes

  • 15 ml/1 tbsp tomato puree (paste)

  • 2 garlic cloves, crushed

  • 1 bay leaf

  • 450 g/1lb spaghetti

  • 15 ml/1 tbsp olive oil

  • 75 g/3 oz/3/4 cup Parmesan cheese, grated


Method:

  1. Chop the onions and fry (sauté) them in the butter until they are translucent.

  2. Add the meat and season with the salt and pepper. Blend in the red wine, tomatoes and tomato puree.

  3. Stir in the crushed garlic and bay leaf. Cook for 20 minutes, stirring regularly, discard the bay leaf.

  4. Cook the spaghetti in a large pan of boiling, salted water for 8-10 minutes. Drain the spaghetti, return to the saucepan and add the oil.

  5. Toss the spaghetti in the oil, season with salt and pepper and add the grated cheese and Bolognese sauce.

  6. Toss over a gentle heat and serve immediately.
