Italian Pasta Recipes - Spaghetti with Garlic and Oil (Spaghetti al Aglio e Olio) Recipe

Ingredients               

  • 450 g/1lb spaghetti

  • 375g/1 1/2 cups olive oil

  • 10 garlic cloves, coarsely chopped

  • 45 ml/3 tbsp finely chopped fresh root ginger

  • 50 g/2 oz/1/2 cup Parmesan cheese, freshly grated


Method:

  1. Cook the spaghetti in a large pan of boiling, salted water until just tender but still firm. Drain well.

  2. Meanwhile, heat the oil and fly (sauté) the garlic and ginger for a few minutes until golden brown, stirring continuously.

  3. Pour over the cooked pasta and toss together well. Serve sprinkled with the Parmesan.
