Italian Pasta Recipes - Spaghetti Pancakes (Crespelle di Spaghetti) Recipe

Ingredients                 

  • 150 g/5 oz spaghetti

  • 5 eggs

  • 1.5 ml/1/4 tsp cayenne

  • 50 g/1/2 cup Parmesan cheese, grated

  • Salt

  • 60 ml/4 tbsp oil

  • Chunky Tomato Sauce, to serve


Method:

  1. Break the spaghetti roughly into 5 cm/2 in lengths and cook in boiling salted water for 8-10 minutes until just tender. Drain.

  2. Beat the eggs with the cayenne and cheese and season with the salt. Stir in the hot spaghetti.

  3. Heat 15 ml/1 tbsp of the oil in a frying pan (skillet) and fry (sauté) a quarter of the spaghetti mixture for 1 minute. Turn and fry on the other side for a further minute.

  4. Remove from the heat and keep warm while the remaining 3 portions of the mixture are cooked.

  5. Serve with Chunky Tomato Sauce.
