Spaghetti Pancakes
(Crespelle di Spaghetti) Recipe
Ingredients

150 g/5 oz
spaghetti
-
5 eggs
-
1.5 ml/1/4 tsp
cayenne
-
50 g/1/2 cup
Parmesan cheese, grated
-
Salt
-
60 ml/4 tbsp oil
-
Chunky
Tomato
Sauce, to serve
Method:

Break the spaghetti
roughly into 5 cm/2 in lengths and cook in boiling
salted water for 8-10 minutes until just tender.
Drain.

Beat the eggs with the cayenne and cheese and
season with the salt. Stir in the hot spaghetti.

Heat 15 ml/1 tbsp of the oil in a frying pan (skillet)
and fry (sauté) a quarter of the spaghetti mixture
for 1 minute. Turn and fry on the other side for a
further minute.

Remove from the heat and keep warm
while the remaining 3 portions of the mixture are
cooked.

Serve with Chunky Tomato Sauce.
