Italian Pasta Recipes - Spaghetti with Pork,

Anchovies (Spaghetti con Maiale, Acciughe e Pomodori) Recipe

Ingredients                 

  • 15 ml/1 tbsp olive oil

  • 1 garlic clove, peeled but left whole

  • 1 onion, sliced

  • 225 g/8 oz/2 cups cooked pork minced (ground)

  • 3 tomatoes, skinned and chopped

  • 1 red (bell) pepper, sliced

  • 25 g/1 oz/1/2 small can anchovies, drained and chopped

  • 2 bay leaves

  • 150ml/2/3 cup pork or vegetable stock

  • Salt and freshly ground black pepper

  • 225 g/8 oz spaghetti

  • 60 ml/4 tbsp grated Pecorino cheese


Method:

  1. Heat the oil in a pan and brown the garlic, onion and minced pork.

  2. Remove the garlic and add the chopped tomatoes, sliced red peppers, anchovies and bay leaves. Cook for 5 minutes and stir in the stock.

  3. Season  with the salt and pepper and simmer for 30 minutes. Remove the bay leaves.

  4. Bring a pan of salted boiling water to the boil and add the spaghetti. Cook for 10 minutes until tender but still firm and drain well.

  5. Pile into a serving dish, pour over the sauce and serve, sprinkled with the cheese.
