Spaghetti with
Pork,
Anchovies
(Spaghetti con Maiale, Acciughe e Pomodori) Recipe
Ingredients
-
15 ml/1 tbsp olive
oil
-
1 garlic clove,
peeled but left whole
-
1 onion, sliced
-
225 g/8 oz/2 cups
cooked pork minced (ground)
-
3 tomatoes, skinned
and chopped
-
1 red (bell)
pepper, sliced
-
25 g/1 oz/1/2 small
can anchovies, drained and chopped
-
2 bay leaves
-
150ml/2/3 cup
pork or vegetable stock
-
Salt and freshly
ground black pepper
-
225 g/8 oz spaghetti
-
60 ml/4 tbsp grated
Pecorino cheese
Method:
-
Heat the oil
in a pan and brown the garlic, onion and minced pork.
-
Remove the garlic and add the chopped tomatoes,
sliced red peppers, anchovies and bay leaves. Cook
for 5 minutes and stir in the stock.

Season
with
the salt and
pepper and simmer for 30 minutes. Remove the
bay leaves.

Bring a pan of salted boiling water to
the boil and add the spaghetti.
Cook
for 10 minutes
until tender
but still firm and drain well.

Pile into a serving
dish, pour over the sauce and serve,
sprinkled with the cheese.
