Italian Pasta Recipes - Spaghetti Veal (Vitello e Spaghetti) Recipe

Ingredients                     

  • 30 ml/2 tbsp plain (all-purpose) flour

  • Salt and freshly ground black pepper

  • 2.5 ml/1/2 tsp chopped fresh oregano

  • 4 veal steaks

  • 75 ml/5 tbsp olive oil

  • 2 onions, chopped

  • 120 ml/1/2 cup water

  • 75 g/3 oz/3/4 cup Parmesan cheese, grated

  • 350 g/12 oz spaghetti


Method:

  1. Season the flour with the salt, pepper and oregano. Toss the steaks in the seasoned flour.

  2. Heat the oil in a frying pan (skillet) and brown the steaks on both sides. Place them in an ovenproof dish.

  3. Fry (sauté) the onions in the oil, drain and add to the dish with the water.

  4. Bake in a preheated oven at 180°C/350°F/gas mark 4 for 1 hour. Add the grated cheese to the oil left in the frying pan and heat gently.

  5. Bring a large pan of salted water to the boil and cook the spaghetti for 10 minutes until tender. Drain well.

  6. Lay the meat in the centre of a serving plate, surround with the spaghetti and pour the sauce over the meat.
