Italian Pasta Recipes - Spicy Pappardelle with Crab (Pappardelle con il Granchio Piccante) Recipe

Ingredients                     

  • 175 g/6 oz/3/4 cup unsalted (sweet) butter

  • 350 g/12 oz crabmeat, flaked

  • 45 ml/3 tbsp white wine

  • 120 ml/1/2 cup single (light) cream

  • 2.5 ml/1/2 tsp cayenne

  • Salt

  • 350 g/12 oz pappardelle or other ribbon pasta

  • 30 ml/2 tbsp chopped fresh parsley


Method:

  1. Melt half the butter in a pan over low heat and stir in the crabmeat.

  2. Add the wine, increase the heat and boil until the wine has almost evaporated.

  3. Stir in the cream and cayenne and season to taste with salt. Cook over a low heat for a few minutes, stirring.

  4. Meanwhile, bring a large pan of salted water to the boil. Add the pappardelle and boil for about 5 minutes for fresh or about 15 minutes for dried, until the pasta is just tender.

  5. Drain and transfer to a warmed serving bowl. Toss with the remaining butter.

  6. Pour the crab sauce over the pasta, sprinkle with the parsley and serve at once.
