Spinach and Ham
Fettuccine (Fettuccine con Spinaci e Proscuitto) Recipe
Ingredients

Salt
-
175 g/6 oz fettuccine
-
225 g/8 oz fresh
spinach, shredded
-
300 ml/1 1/4 cups Parmesan
Sauce
-
5ml/1 tsp made
mustard
-
15 ml/1 tbsp chopped
fresh parsley
-
75 g/3 oz prosciutto, thinly sliced
-
15g/1/2 oz/2 tbsp
Parmesan cheese, grated

25 g/1 oz/1/2 cup
fresh breadcrumbs
Method:
-
Bring a large pan of
salted water to the boil and cook the pasta for 10
minutes until just tender. Drain thoroughly and
return to the saucepan.

Add the spinach, Parmesan
sauce, mustard and parsley and toss gently. Spoon
into an ovenproof dish.

Cover with the slices of prosciutto and sprinkle over the cheese and
breadcrumbs.

Bake in a preheated oven at
200°C/400°F/gas mark 6 for about 15 minutes until
brown on top.
