Italian Pasta Recipes - Sun-dried Tomato Pasta (Pasta con Pomodori Secchi) Recipe

Ingredients                      

  • 30 ml/2 tbsp chopped fresh coriander (cilantro)

  • 75 g/3 oz/3/4 cup Parmesan cheese, grated

  • 60 ml/4 tbsp Ricotta cheese

  • Salt and freshly ground black pepper

  • 50 g/2 oz sun-dried tomatoes, drained and chopped

  • 75 ml/5 tbsp olive oil

  • 350 g/12 oz pasta spirals


Method:

  1. Puree the coriander with the Parmesan, Ricotta cheese, salt, pepper, sun-dried tomatoes and olive oil in a blender or food processor until smooth.

  2. Cook the pasta in plenty of salted, boiling water for 10 minutes until firm but cooked. Drain and return the pasta to the pan.

  3. Pour over the dressing and toss together over a low heat. Serve immediately.
