Tagliarini with
Peas (Tagliarini con Piselli) Recipe
Ingredients

175 g/6 oz fresh or
frozen peas
-
40 g/5 tbsp unsalted (sweet) butter
-
90 ml/6 tbsp double
(heavy) cream
-
Salt and freshly ground black pepper
-
350 g/12 oz tagliarini
-
15 ml/1 tbsp chopped
fresh basil
-
50 g/2 oz/1/2 cup
Pecorino cheese, grated
Method:

Cook the peas, drain and puree in a blender or food
processor.

Stir in the butter and cream. Season to
taste and heat through.

Bring a large pan of salted
water to the boil and cook the tagliarini until just
tender. Drain and return to the saucepan.

Pour over
the pea sauce, season with salt and pepper and
sprinkle over the basil and Pecorino cheese.
