Italian Pasta Recipes - Tagliatelle Crab (Tagliatelle con Grancho) Recipe

Ingredients                     

  • 1 onion, finely chopped

  • 100 g/4 oz mushrooms, chopped

  • 15 ml/1 tbsp olive oil

  • 225 g/8 oz cauliflower florets

  • 450 g/1lb tagliatelle

  • 50 g/2 oz/1/4 cup unsalted (sweet) butter

  • 50 g/2 oz/1/2 cup plain (all-purpose) flour

  • 600 ml/1 pt/2 1/2 cups milk

  • 30 ml/2 tbsp white wine

  • 225 g/8 oz crabmeat, flaked

  • Salt and freshly ground black pepper


Method:

  1. Fry (sauté) the onion and mushrooms in the oil and boil or steam the cauliflower for 10 minutes until just tender.

  2. Cook the pasta in boiling water until it is firm but cooked.

  3. Heat the butter in a saucepan and stir in the flour. Cook for 1 minute and gradually stir in the milk.

  4. Add the white wine, return to the heat and bring to the boil, stirring. Stir in the crab, cauliflower and the mushroom and onion mixture.

  5. Heat through and season to taste. Drain the pasta and arrange in a large serving bowl. Pour over the crab mixture and serve.
