Fettucine (Fettuccine a Tre Colori) Recipe
Ingredients

225 g/8 oz tricolor
fettuccine
-
60 ml/4 tbsp olive oil
-
25 g/1 oz/2 tbsp unsalted
(sweet) butter
-
5 ml/1 tsp lemon rind
-
Salt and freshly ground
black pepper
-
45 ml/3 tbsp chopped fresh
herbs
-
4 tomatoes, skinned and
chopped
-
Slivers of Parmesan cheese
Method:
-
Bring a large pan of salted
water to the boil and cook the fettuccine for 10
minutes until firm but tender.

Heat the olive oil and butter
in a frying pan (skillet) and add the lemon rind and
seasoning.
-
Stir in the herbs and tomatoes
and cook thoroughly for 5 minutes. Drain the pasta
and turn into a warm serving bowl.
-
Pour over the sauce and serve
immediately with the Parmesan cheese.
