Italian Pasta Recipes - Three-color Fettucine (Fettuccine a Tre Colori) Recipe

Ingredients                     

  • 225 g/8 oz tricolor fettuccine

  • 60 ml/4 tbsp olive oil

  • 25 g/1 oz/2 tbsp unsalted (sweet) butter

  • 5 ml/1 tsp lemon rind

  • Salt and freshly ground black pepper

  • 45 ml/3 tbsp chopped fresh herbs

  • 4 tomatoes, skinned and chopped

  • Slivers of Parmesan cheese


Method:

  1. Bring a large pan of salted water to the boil and cook the fettuccine for 10 minutes until firm but tender.

  2. Heat the olive oil and butter in a frying pan (skillet) and add the lemon rind and seasoning.

  3. Stir in the herbs and tomatoes and cook thoroughly for 5 minutes. Drain the pasta and turn into a warm serving bowl.

  4. Pour over the sauce and serve immediately with the Parmesan cheese.
