Tomato-baked
Macaroni (Maccheroni al Forno con Pomodori) Recipe
Ingredients

2.5 ml/1/2 tsp salt

225 g/8 oz macaroni
-
25 g/1 oz/2 tbsp
unsalted (sweet) butter

3 tomatoes, skinned and
sliced
-
30 ml/2 tbsp olive
oil
-
Salt and freshly
ground black pepper

100 g/4 oz/1 cup
Parmesan cheese, grated
Method:

Bring a large pan of salted water to the boil and cook the macaroni for
10 minutes. Drain well and pour into a casserole
dish (Dutch oven).

Dot with small pieces of butter.
Place the sliced tomatoes over the macaroni and pour
the oil over the tomatoes. Season well.

Bake at
190°C/375°F/gas mark 5 for 15 minutes. Sprinkle with
the grated cheese and return to the oven for 10
minutes. Serve at once.
