Italian Pasta Recipes - Tomato-baked Macaroni (Maccheroni al Forno con Pomodori) Recipe

Ingredients                      

  • 2.5 ml/1/2 tsp salt

  • 225 g/8 oz macaroni

  • 25 g/1 oz/2 tbsp unsalted (sweet) butter

  • 3 tomatoes, skinned and sliced

  • 30 ml/2 tbsp olive oil

  • Salt and freshly ground black pepper

  • 100 g/4 oz/1 cup Parmesan cheese, grated


Method:

  1. Bring a large pan of salted water to the boil and cook the macaroni for 10 minutes. Drain well and pour into a casserole dish (Dutch oven).

  2. Dot with small pieces of butter. Place the sliced tomatoes over the macaroni and pour the oil over the tomatoes. Season well.

  3. Bake at 190°C/375°F/gas mark 5 for 15 minutes. Sprinkle with the grated cheese and return to the oven for 10 minutes. Serve at once.
