Italian Pasta Recipes - Tomato and Onion Tagliatelle (Tagliatelle con Pomodoro e Cipolla) Recipe

Ingredients                      

  • 175 g/6 oz button (pearl) onions, quartered

  • 60 ml/4 tbsp olive oil

  • 15 ml/1 tbsp brown sugar

  • 100 g/4 oz small cherry tomatoes, halved

  • 350 g/12 oz tagliatelle

  • 25 g/1 oz/2 tbsp unsalted (sweet) butter

  • Salt and freshly ground black pepper

  • 5 ml/1 tsp chopped fresh sage


Method:

  1. Place the onions in a frying pan (skillet) with the oil and sugar and cook on high for 5 minutes, stirring occasionally.

  2. Add the tomatoes and fry (sauté) for 1 minute. Place the pasta in a large pan of boiling, salted water and cook until just tender. Drain and return to the pan.

  3. Add the butter and pour into a warmed serving dish. Spoon over the onions and tomatoes, season and sprinkle over the sage.
