Tortellini with
Tomato, Caper and Onion Sauce (Tortellini con Salsa di
Pomodoro, Cappero e Cipolla) Recipe
Ingredients

30 ml/2 tbsp olive
oil
-
2 onions, chopped
-
1 garlic clove,
chopped
-
5 large tomatoes,
skinned, seeded and chopped
-
60 ml/4 tbsp
vegetable stock
-
30 ml/2 tbsp
capers, chopped
-
Salt and freshly
ground black pepper
-
350 g/12 oz tortellini
-
75 g/3 oz/3/4 cup
Parmesan cheese, grated
Method:
-
Heat the oil in a saucepan and fry (sauté) the onions and garlic. Stir in
the tomatoes and stock.

Bring to the boil, reduce
the heat and simmer for to minutes.
-
Add the capers
and season with the salt and pepper. Cook a further
to minutes until the sauce is pulpy.

Bring a large
pan of salted water to the boil and cook the pasta
for to minutes. Drain.

Spoon the sauce over the
cooked pasta. Sprinkle with Parmesan cheese and
serve immediately.
