Italian Pasta Recipes - Tortellini with Tomato, Caper and Onion Sauce (Tortellini con Salsa di Pomodoro, Cappero e Cipolla) Recipe

Ingredients                      

  • 30 ml/2 tbsp olive oil

  • 2 onions, chopped

  • 1 garlic clove, chopped

  • 5 large tomatoes, skinned, seeded and chopped

  • 60 ml/4 tbsp vegetable stock

  • 30 ml/2 tbsp capers, chopped

  • Salt and freshly ground black pepper

  • 350 g/12 oz tortellini

  • 75 g/3 oz/3/4 cup Parmesan cheese, grated


Method:

  1. Heat the oil in a saucepan and fry (sauté) the onions and garlic. Stir in the tomatoes and stock.

  2. Bring to the boil, reduce the heat and simmer for to minutes.

  3. Add the capers and season with the salt and pepper. Cook a further to minutes until the sauce is pulpy.

  4. Bring a large pan of salted water to the boil and cook the pasta for to minutes. Drain.

  5. Spoon the sauce over the cooked pasta. Sprinkle with Parmesan cheese and serve immediately.
