Italian Pasta Recipes - Veal with Macaroni (Vitello con Maccheroni) Recipe

Ingredients                     

  • 100 g/4 oz macaroni

  • 25 g/1 oz/2 tbsp unsalted (sweet) butter

  • 15 ml/1 tbsp oil

  • 1 large onion, sliced

  • 3 large tomatoes, skinned and sliced

  • 4 slices veal, cut from loin fillet

  • Salt and freshly ground black pepper

  • 1 egg, hard-boiled (hard-cooked) and chopped

  • 15 ml/1 tbsp chopped fresh parsley


Method:

  1. Bring a pan of salted water to the boil and add the macaroni. Cook for 10 minutes and drain.

  2. Heat the butter and oil in a frying pan (skillet) and cook the onion and tomatoes until tender.

  3. Place in a hot dish and add the drained macaroni. Keep warm.

  4. Season the fillets with the salt and pepper and fry (sauté) in the oil for 6-8 minutes on both sides until tender.

  5. Arrange the veal fillets on top of the tomato and macaroni. Blend the chopped hard-boiled egg with the parsley and sprinkle over the veal. Serve at once.
