Veal with Macaroni
(Vitello con Maccheroni) Recipe
Ingredients
-
100 g/4 oz macaroni
-
25 g/1 oz/2 tbsp
unsalted (sweet) butter
-
15 ml/1 tbsp oil
-
1 large onion,
sliced
-
3 large tomatoes,
skinned and sliced
-
4 slices veal, cut from loin
fillet
-
Salt and freshly
ground black pepper
-
1 egg, hard-boiled (hard-cooked) and chopped
-
15 ml/1 tbsp
chopped fresh parsley
Method:
-
Bring a pan of salted water to the boil and add the macaroni.
Cook
for 10 minutes
and drain.

Heat
the butter and oil in a frying pan (skillet) and
cook the onion and tomatoes until tender.
-
Place in a
hot dish and add the drained macaroni. Keep warm.

Season the fillets with the salt and pepper and fry (sauté) in the oil for 6-8 minutes on both sides until tender.

Arrange the veal fillets on top of the tomato and
macaroni. Blend the chopped hard-boiled egg with the
parsley and sprinkle over the veal. Serve at once.
