Italian Pasta Recipes - Vermicelli with Peppers (Vermicelli con Peperoni) Recipe

Ingredients                      

  • 15 ml/1 tbsp olive oil

  • 1 red onion, sliced

  • 1 red (bell) pepper, sliced

  • 1 green (bell) pepper, sliced

  • 1 yellow (bell) pepper, sliced

  • 15 ml/1 tbsp red wine

  • 15 ml/1 tbsp wine vinegar

  • 3 tomatoes, skinned, seeded and chopped

  • 5 ml/1 tsp sugar

  • Salt and freshly ground black pepper

  • 350 g/12 oz vermicelli

  • 15 ml/1 tbsp chopped fresh parsley


Method:

  1. Heat the oil and fry (sauté) the onion and peppers until soft.

  2. Stir in the wine and vinegar and heat until the liquid has evaporated. Stir in the tomatoes, sugar, salt and pepper and simmer for 20 minutes.

  3. Cook the vermicelli in boiling water for 8 minutes until tender but still firm. Drain, and turn into a warmed serving dish.

  4. Pour over the pepper sauce and serve sprinkled with the parsley.
