and Cheese Pasta (Tagliarini con Noci, Funghi e
Formaggio) Recipe
Ingredients

30 ml/2 tbsp olive
oil
-
1 small onion,
finely chopped
-
1 garlic clove,
chopped
-
100 g/4 oz
mushrooms, thinly sliced
-
75 g/3 oz/3/4 cup walnut
pieces
-
Salt and freshly
ground black pepper
-
400 g/1lb tagliarini
-
100 g/4 oz/1 cup
goats' cheese, crumbled
-
30 ml/2 tbsp chopped
fresh sage
Method:

Heat the oil in a frying pan (skillet), cook the
onion and garlic and add the mushrooms.

Cook until
the mushrooms are soft
and add the walnuts, salt and pepper.
Cook
for a further 3 minutes.

Bring a large pan of salted
water to the boil and cook the tagliarini for 5
minutes until the pasta is firm but tender. Drain.
-
Spoon the sauce over the pasta. Crumble the goats'
cheese with the chopped sage and sprinkle over the
pasta.
