Italian Pasta Recipes - Walnut, Mushroom and Cheese Pasta (Tagliarini con Noci, Funghi e Formaggio) Recipe

Ingredients                 

  • 30 ml/2 tbsp olive oil

  • 1 small onion, finely chopped

  • 1 garlic clove, chopped

  • 100 g/4 oz mushrooms, thinly sliced

  • 75 g/3 oz/3/4 cup walnut pieces

  • Salt and freshly ground black pepper

  • 400 g/1lb tagliarini

  • 100 g/4 oz/1 cup goats' cheese, crumbled

  • 30 ml/2 tbsp chopped fresh sage


Method:

  1. Heat the oil in a frying pan (skillet), cook the onion and garlic and add the mushrooms.

  2. Cook until the mushrooms are soft and add the walnuts, salt and pepper. Cook for a further 3 minutes.

  3. Bring a large pan of salted water to the boil and cook the tagliarini for 5 minutes until the pasta is firm but tender. Drain.

  4. Spoon the sauce over the pasta. Crumble the goats' cheese with the chopped sage and sprinkle over the pasta.
