Artichoke Pizza
(Pizza Ai Carciofi) Recipe
Ingredients
Topping:

1 onion, chopped
-
2 eggs
-
150 ml/2/3 cup
single (light) cream
-
15 ml/1 tbsp chopped fresh
marjoram
-
400 g/14 oz/1 large can artichoke hearts, drained and
halved

2 tomatoes, thinly
sliced
Method:

Prepare the pizza base
and leave to rise. Meanwhile, heat the olive oil in
a pan and cook the onion until soft.

Remove from the
heat. Beat in the eggs, cream, marjoram and salt and
pepper to taste.

Arrange the artichoke hearts on the
pizza base. Pour over the herb and egg mixture and
arrange the tomato slices on the top.

Bake in a
preheated oven at 200°C/400°F/gas mark 6 for 15-20
minutes.
