Italian Pizza Recipes - Aubergine Pizza (Pizza alla Melanzana) Recipe

Ingredients       

  • 1 quantity Spicy Pizza Dough

Topping:

  • 1 large aubergine (eggplant), sliced

  • Salt

  • 1 onion, chopped

  • 3 tomatoes, seeded and chopped

  • 15 ml/1 tbsp tomato puree (paste)

  • 15 ml/1 tbsp olive oil

  • 50 g/2 oz/1/2 cup Parmesan cheese, grated

  • 15 ml/1 tbsp chopped fresh oregano


Method:

  1. Prepare the pizza base and leave to rise. Meanwhile sprinkle the aubergine with salt and leave to stand for 25 minutes.

  2. Rinse and dry on kitchen paper. Place on the pizza base with the onion, tomatoes and the tomato puree.

  3. Drizzle the oil over the tomatoes and sprinkle with the grated cheese and oregano.

  4. Bake in a preheated oven at 220°C/425°F/gas mark 7 for 15-20 minutes until the base is crisp.
