Pizza (Pizza alla Cipolle Caramellizate) Recipe
Ingredients

15 ml/1 tbsp olive
oil
-
10 ml/2 tsp
semolina (cream of wheat)
-
3 onions, thinly
sliced
-
1 quantity Basic
Pizza Dough
-
6 rashers (slices)
bacon, rinded and chopped
-
15 ml/1 tbsp
chopped fresh sage
Method:
-
Oil a baking sheet and sprinkle with the semolina. Heat the remaining oil
in a frying pan (skillet) and add the onion.
-
Cook
over a low heat for 25 minutes until the onions are
soft and brown.
-
Roll out the dough into a 25 cm/10
in round and place on the baking sheet. Cover with
the onions.
-
Sprinkle with the bacon or pancetta and
sage and bake in a preheated oven for 10-15 minutes
at 230°C/450°F/gas mark 8.
