Italian Pizza Recipes - Chicken, Garlic and Tomato Pizza (Pizza di Chieti) Recipe

Ingredients       

  • 225 g/8 oz/2 cups plain (all-purpose) flour

  • 5 ml/1 tsp salt

  • 100 g/4 oz/1/2 cup margarine

  • 60 ml/4 tbsp water

  • 30 ml/2 tbsp tomato puree (paste)

  • 15 ml/1 tbsp olive oil

  • 1 garlic clove, crushed

  • 1 onion, roughly chopped

  • 100 g/4 oz/1 cup cooked chicken, chopped

  • 3 tomatoes, skinned and chopped

  • 15 ml/1 tbsp chopped fresh basil

  • Salt and freshly ground black pepper

  • 175 g/6 oz Mozzarella cheese, sliced

  • 15 ml/1 tbsp black olives, stoned (pitted)


Method:

  1. Place the flour and salt in a bowl and rub in the margarine until the mixture resembles breadcrumbs.

  2. Blend in enough water to form a soft but not sticky dough.

  3. Knead lightly on a floured surface and roll out the dough to line an oiled 25 cm/10 in pizza tin (pan).

  4. Prick the base of the pastry and spread with the tomato puree.

  5. Heat the oil in a frying pan (skillet) and cook the garlic and onion for 2 minutes. Remove from the heat.

  6. Mix in the chicken, tomatoes, basil, salt and pepper. Spoon over the pastry base and top with the Mozzarella cheese.

  7. Garnish with the olives and bake in a preheated oven at 200°C/400°F/gas mark 6 for 15-20 minutes until golden and cooked through.
