Chicken Pizza
(Pizza al Pollo) Recipe
Ingredients
Topping:
-
2 chicken breasts,
thinly sliced
-
15 ml/1 tbsp olive
oil
-
30 ml/2 tbsp tomato
puree (paste)
-
5 ml/1 tsp chopped
fresh basil
-
100 g/4 oz
Mozzarella cheese, sliced

50 g/2 oz/1/2 cup Parmesan
cheese, grated
Method:

Prepare the dough and press into an oiled 30 X 18
cm/12 X 7 in shallow baking tin (pan).

Cover with Clingfilm (plastic wrap) and leave in a warm place
for 30 minutes until the dough has risen.

Fry (sauté)
the chicken in the oil for 2 minutes. Spread the
dough with the tomato puree and sprinkle with the
basil.

Lay the chicken slices over the top. Place
the Mozzarella over the chicken. Sprinkle over the
Parmesan cheese.

Bake in a preheated oven at
220°C/425°F/gas mark 7 for 15 minutes.
