Rounds (Pizze Croccanti con Formaggio) Recipe
Ingredients

75 g/3 oz/1/3 cup
unsalted (sweet) butter
-
25 g/1 oz/2 tbsp
sugar
-
5 ml/1 tsp salt
-
2 eggs, beaten
-
15 g/1/2 oz/1 tbsp
easy-blend dried yeast
-
30 ml/2 tbsp warm
water
-
450 g/4 cups
strong white (bread) flour
-
50 g/2 oz/1/2 cup
Parmesan cheese, grated
Method:
-
Cream two-thirds of the butter and the sugar and beat in the salt and
beaten eggs.

Add the yeast and flour, and water if
necessary to form a firm dough. Knead for 5 minutes.

Cover and leave to rise in a warm place for 1 hour. Form
into two 25 cm/10 in rounds and place on
greased baking sheets.

Spread each piece of dough
with the remaining butter and sprinkle with the cheese. Leave for 20 minutes to rise.

Bake in a preheated oven at
200°C/400°F/gas mark 6 for 20 minutes, sprinkle with
additional cheese, if liked.
