Italian Pizza Recipes - Crusty Cheese Rounds (Pizze Croccanti con Formaggio) Recipe

Ingredients       

  • 75 g/3 oz/1/3 cup unsalted (sweet) butter

  • 25 g/1 oz/2 tbsp sugar

  • 5 ml/1 tsp salt

  • 2 eggs, beaten

  • 15 g/1/2 oz/1 tbsp easy-blend dried yeast

  • 30 ml/2 tbsp warm water

  • 450 g/4 cups strong white (bread) flour

  • 50 g/2 oz/1/2 cup Parmesan cheese, grated


Method:

  1. Cream two-thirds of the butter and the sugar and beat in the salt and beaten eggs.

  2. Add the yeast and flour, and water if necessary to form a firm dough. Knead for 5 minutes.

  3. Cover and leave to rise in a warm place for 1 hour. Form into two 25 cm/10 in rounds and place on greased baking sheets.

  4. Spread each piece of dough with the remaining butter and sprinkle with the cheese. Leave for 20 minutes to rise.

  5. Bake in a preheated oven at 200°C/400°F/gas mark 6 for 20 minutes, sprinkle with additional cheese, if liked.
