Four-seasons Pizza
(Pizza alle Quattro Stagioni) Recipe
Ingredients

1 quantity Basic Pizza
Dough
-
100 ml/6 1/2
tbsp passata (sieved tomatoes)

50 g/2 oz button
mushrooms, sliced

100 g/4 oz
Mozzarella cheese, chopped

60 ml/4 tbsp olive
oil
-
2 thin slices
prosciutto, chopped
-
1 small garlic
clove, finely chopped
-
15 ml/1 tbsp chopped
fresh parsley
-
1.5 ml/1/4 tsp
dried oregano
-
85 g/3 1/2 oz/1 small
can tuna, drained

2 black olives,
sliced

Salt and freshly ground black pepper
Method:

Prepare the pizza dough. Spread the risen pizza base
with the passata to within 2 cm/3/4 in of the
edge all round.

Mark the pizza into quarters with
the back of a knife. Cover one quarter with the
sliced mushrooms.

Top with half the Mozzarella and drizzle with 15
ml/1 tbsp olive oil. Cover
the opposite quarter with the prosciutto and
the remaining cheese.

Drizzle with a further 15ml/1 tbsp of the oil. Sprinkle the third
quarter with the garlic, parsley and oregano and
drizzle with half the remaining oil.

Flake
the tuna and use to cover the last quarter. Sprinkle
with the olives and drizzle with the remaining oil.

Sprinkle all over with a little salt and a
good
grinding of pepper and bake in a preheated
oven at 230°C/450°F/gas mark 8 for about 15
minutes until golden and sizzling. Serve straight
away.
Note: You can ring the changes with
other toppings on each quarter if you prefer.
