Italian Pizza Recipes - Pizza Lattice Pie (Pizza Ingraticciate) Recipe

Ingredients       

  • 225 g/8 oz/2 cups plain (all-purpose) flour

  • 5 ml/1 tsp salt

  • 5 ml/1 tsp mustard powder

  • 100 g/4 oz/1/2 cup unsalted (sweet) butter

  • 100 g/4 oz/1 cup hard cheese, grated

  • 60 ml/4 tbsp water

  • 30 ml/2 tbsp tomato puree (paste)

  • 15 ml/1 tbsp olive oil

  • 1 garlic clove, crushed

  • 2 onions, roughly chopped

  • 1 courgette (zucchini), diced

  • 1 tomato, peeled and chopped

  • 15 ml/1 tbsp sage, chopped

  • Salt and freshly ground black pepper

  • 175 g/6 oz/1 1/2 cups Mozzarella cheese, grated

  • 15 ml/1 tbsp black olives, stoned (pitted)


Method:

  1. Place the flour, salt and mustard powder in a bowl and rub in the butter until the mixture resembles breadcrumbs.

  2. Stir in the grated cheese and blend in enough water to form a soft dough.

  3. Knead lightly on a floured surface and roll out the pastry to line a 23 cm/9 in flan tin (pie pan).

  4. Prick the base of the pastry and spread with the tomato puree. Heat the oil in a frying pan (skillet) and cook the garlic and onions for 2 minutes.

  5. Place the onions in a bowl and mix in the courgette, tomato, sage, salt and pepper. Spoon into the pastry case (pie shell) and top with the Mozzarella cheese.

  6. Roll out the pastry trimmings and cut 10 thin strips. Twist the strips and place five strips crossways over the flan and five at an angle to these to form a lattice topping.

  7. Trim the edges of the pastry. Garnish with the olives. Bake in a preheated oven at 200°C/400°F/gas mark 6 for 25 minutes.
