Italian Pizza Recipes - Quick Mushroom Pizza (Pizza di Funghi Alla Svelta) Recipe

Ingredients       

  • 2 large Focaccia bread rounds

  • 60 ml/4 tbsp olive oil

  • 100 g/4 oz mushrooms, sliced

  • 2 garlic cloves, crushed

  • 425 g/1 large jar pizza sauce

  • 10 ml/2 tsp chopped fresh basil

  • 225 g/8 oz Mozzarella cheese, sliced

  • 6 black olives, stoned (pitted)


Method:

  1. Slice the bread rounds in half horizontally and brush each slice with the olive oil. Place on a baking sheet.

  2. Fry (sauté) the mushrooms in a little oil for 5 minutes. Spread the garlic over the bread.

  3. Spoon over half the pizza sauce and sprinkle over the basil. Top with the mushrooms. Place the Mozzarella on top.

  4. Spoon over the rest of the sauce and garnish with the black olives.

  5. Bake in a preheated oven at 200°C/400°F gas mark 6 for 15-20 minutes until the cheese has melted.
