Pizza (Pizza Genovese) Recipe
Ingredients

2 large focaccia
bread rounds
-
60 ml/4 tbsp olive
oil
-
425 g/15 oz/1 large
jar pizza sauce with basil
-
10 ml/2 tsp chopped
fresh basil
-
225 g/8 oz seafood
cocktail, thawed if frozen

225 g/8 oz
Mozzarella cheese, thinly sliced

50 g/2 oz/1 small
can anchovies, drained

6 black olives
Method:

Slice the bread rounds in half horizontally and brush each slice with
olive oil.

Heat a frying pan (skillet) and add each
oiled slice to seal, or flash under a hot grill
(broiler). This prevents the dough from becoming
soggy.

Place the bread rounds on baking sheets and
spoon 45 ml/3 tbsp pizza sauce on each one.

Cover with the cheese, then seafood and more tomato
sauce.

Add the anchovies and olives and bake in a
preheated oven at 200°C/400°F/gas
mark 6 for 15 minutes.
