Ingredients

50 g/2 oz/1/4 cup
unsalted (sweet) unsalted
(sweet) butter
-
225 g/8 oz/2 cups
plain (all-purpose) flour
-
5 ml/1 tsp baking
powder
-
5 ml/1 tsp chopped
fresh parsley
-
5 ml/1 tsp chopped
fresh oregano
-
100 g/4 oz/1 cup
hard cheese, grated
-
Salt and freshly ground black
pepper
-
45 ml/3 tbsp milk
-
45 ml/3 tbsp water
-
45 ml/3 tbsp tomato
puree (paste)
-
225 g/8 oz Italian
sausages, cooked and roughly chopped
-
3 large tomatoes,
cut into thin wedges
Method:
-
Grease a 28 X 18cm/11 X 7 in baking tin (pan) with a
little of the butter.
-
Sift the flour and baking
powder into a bowl and rub the butter in until the
mixture resembles breadcrumbs.
-
Add half the parsley
and oregano. Stir in one third of the cheese. Season
with salt and pepper.

Blend the milk and water and
add enough to the mixture to form a soft, but not
sticky, dough. Knead lightly on a floured surface
and roll out to fit the pizza tin.

Spread over the
tomato puree and top with the chopped sausages.

Arrange the tomato wedges on the pizza and sprinkle
over the remaining cheese, parsley and oregano.

Season with salt and pepper and bake in a preheated
oven at 220°C/425°F/gas mark 7 for 15-20 minutes.

Cut into large wedges and serve hot or cold.
