Italian Pizza Recipes - Stuffed Pizza (Calzone) Recipe

Ingredients       

  • 1 quantity Basic Pizza Dough

Filling:

  • 25 g/1 oz/1/2 cup breadcrumbs

  • 45 ml/3 tbsp olive oil

  • 1 small onion, thinly sliced

  • 50 g/2 oz mild salami, chopped

  • 75 g/3 oz Fontina or Mozzarella cheese, finely diced

  • 50 g/2 oz/1/4 cup Ricotta cheese


Method:

  1. Grease a large baking sheet with a little oil. Prepare the dough. Do not shape but leave in the bowl, cover and place in a warm place to rise for 30 minutes.

  2. Knead the dough for 5 minutes and roll out two 5 mm/1/4 in thin circular rounds approximately 20 cm/8 in in diameter.

  3. Sprinkle half of the breadcrumbs over each pizza base and drizzle over half of the oil.

  4. Top each with half of the chopped onion, salami, Fontina and Ricotta cheeses.

  5. Fold over and pinch the two edges together to seal. Transfer to the baking sheet.

  6. Brush the tops with u pastry brush moistened in water and bake for 15-20 minutes in a preheated oven at 200°C/400°F/gas mark 6.
