Italian Pizza Recipes - Sweet Corn and Chicken Pizza (Pizza al Mais e Pollo) Recipe

Ingredients       

  • 50g/1/4 cup unsalted (sweet) butter

  • 225 g/8 oz/2 cups plain (all-purpose) flour

  • 5ml/1 tsp baking powder

  • 5ml/1 tsp chopped fresh oregano

  • 25 g/1/4 cup Mozzarella cheese, grated

  • 5ml/1 tsp coarsely crushed black peppercorns

  • Salt and freshly ground black pepper

  • 45 ml/3 tbsp milk

  • 45 ml/3 tbsp water

  • 45 ml/3 tbsp tomato puree (paste)

  • 225 g/8 oz/2 cups cooked chicken, roughly chopped

  • 200 g/7 oz/1 small can sweet corn, drained

  • 3 large tomatoes, cut into thin slices

  • 100 g/4 oz Mozzarella cheese, sliced


Method:

  1. Grease a 28 X 18 cm/11 X 7 in tin with a little of the butter.

  2. Sift the flour and baking powder into a bowl and rub the butter in to resemble breadcrumbs.

  3. Add half the oregano. Stir in the grated cheese and peppercorns. Season with salt and pepper.

  4. Blend the milk and water and add enough to the mixture to form a soft, but not sticky, dough.

  5. Knead lightly on a floured surface and roll out to fit the pizza tin.

  6. Spread over the tomato puree and top with the chopped chicken, sweet corn and the remaining oregano. Arrange the tomato slices and top with the Mozzarella.

  7. Season with salt and pepper and bake in a preheated oven at 220°C/425°F/gas mark 7 for 15-20 minutes. Cut into large squares and serve hot.
