Sweet Corn and
Chicken Pizza (Pizza al Mais e Pollo) Recipe
Ingredients
50g/1/4
cup
unsalted (sweet) butter
225 g/8 oz/2 cups plain (all-purpose) flour
5ml/1 tsp baking
powder
5ml/1 tsp chopped
fresh oregano
25 g/1/4 cup
Mozzarella cheese, grated
5ml/1 tsp coarsely
crushed black peppercorns
Salt and freshly
ground black pepper
45 ml/3 tbsp milk
45 ml/3 tbsp water
45 ml/3 tbsp tomato
puree (paste)
225 g/8 oz/2 cups
cooked chicken, roughly
chopped
200 g/7 oz/1 small
can sweet corn, drained
3 large tomatoes,
cut into thin slices
100 g/4 oz
Mozzarella cheese, sliced
Method:
Grease a 28 X 18 cm/11
X 7 in tin with a little of the butter.
Sift the
flour and baking powder into a bowl and rub the
butter in to resemble breadcrumbs.
Add half the oregano. Stir in the grated cheese and peppercorns. Season
with salt and pepper.
Blend the milk and water and
add enough to the mixture to form a soft, but not
sticky, dough.
Knead lightly on a floured surface
and roll out to fit the pizza tin.
Spread over the
tomato puree and top with the chopped chicken, sweet corn and the remaining oregano. Arrange the
tomato slices and top with the Mozzarella.
Season with salt and pepper and bake
in a preheated oven at 220°C/425°F/gas mark 7 for
15-20 minutes. Cut into large squares and serve hot.
