Italian Rice Recipes - Ham and Turkey Risotto (Risotto di Prosciutto e Tacchino) Recipe

Ingredients

  • 30 ml/2 tbsp oil

  • 2 large onions, finely chopped

  • 2 garlic cloves, crushed

  • 350 g/12 oz/1 1/2 cups risotto rice

  • 900 ml/3 3/4 cups chicken stock

  • Salt and freshly ground black pepper

  • 225 g/8 oz/2 cups cooked turkey, cut in strips

  • 100 g/4 oz cooked ham, cut in strips

  • 4 tomatoes, skinned, seeded and cut in chunks

  • 100g/14 oz fresh or frozen peas, thawed

  • 100 g/4 oz/1 cup Parmesan cheese, grated


Method:

  1. Heat the oil in a large pan and fry (sauté) the onions and garlic for 1 minute.

  2. Add the rice and cook until the oil is absorbed into the rice. Stir in the stock and simmer gently for 25 minutes until the rice is just cooked.

  3. Season with the salt and pepper and add the turkey, ham, tomatoes and drained peas.

  4. Heat through for 2 minutes, stirring all the time and season again to taste. Serve with the Parmesan cheese.
